My Delicious (and super easy) Summer Salad

INGREDOS
- 2 punnets cherry tomatoes
- 1 bunch coriander
- 1 long red chilli (deseeded)
- 1/2 bunch curly parsley
- 2 cloves garlic
- 1 good knob of ginger (peeled)
- 1 lemon (rind + juice)
- 2 avocados
- 2 Lebanese cucumbers (deseeded)
- 1 bag baby spinach
- Handful of torn basil leaves
- Sherry vinegar
- Extra virgin olive oil (EVO)
- Salt & pepper (S+P)
- Sumac

Instructions:

1. Cut cherry tomatoes in half. Slice deseeded chilli, grate ginger and garlic. Add to a deep salad bowl with lemon rind, finely sliced parsley, chopped coriander roots and stems. Pour sherry vinegar, stir, and refrigerate for 20 mins.

2. Once marinated, add baby spinach, roughly chopped cucumbers, avocados, coriander leaves, torn basil leaves, lemon juice, a generous glug of EVO, S+P, and sumac to taste. Toss well and serve immediately. Enjoy!
